Fresh Pasta

When I get a day off, one of my favorite activities is to make fresh pasta. This is typically the recipe I use to serve four.

Ingredients:

  • 4 Cups 00 Flour - We use King Arthur’s

  • 4 Eggs, 2 Egg Yolks

  • Olive Oil

  • Salt

Steps:

  • Grab a large mixing bowl and add your flour. Form a well in the middle of the flour and that’s where you’ll place all of your eggs plus a pinch of salt.

  • Use a fork and start to whisk the eggs together, slowing circling the well to incorporate the flour.

  • Once you get about half the flour mixed in, start mixing with your hands. We want to get as much flour incorporated as we can. I typically use a tablespoon of water in the mixing process to help this.

  • When you feel you have as much flour incorporated as you can, we’re going to transfer it to a flat service and knead the dough by hand for 4-5 minutes.

  • After kneading, form a ball and spray the outside of the dough ball with a little olive oil before you wrap it in plastic wrap.

  • Let the dough sit for 30 minutes - 4 hours and then you’re ready to form your pasta.

  • I typically use a pasta roller or my KitchenAid pasta plate attachments to form my noodles. However, you don’t need any fancy equipment. While a pasta roller does make it easier to get your dough thin enough, You can use a rolling pin and knife for some easy pappardelle.

After your dough is ready, you can let it dry to use later or cook it directly afterwards while it’s fresh! We typically boil the pasta for 3-5 minutes until it’s cooked al dente, then finish it in our favorite sauce.
